Bone Marrow Slurpie

After driving straight across the country to return to Colorado, the many frozen slurpies at gas stations sparked our conversation about a bone marrow slurpie I sampled while in New York. I like bone marrow, particularly of veal and beef. I enjoy it on toast, in an enriched hollandaise sauce, or poached in broth and served with ponzu sauce. Through our recent culinary travels, I had the shocking pleasure of trying pork marrow at Grand Sichuan in Manhattan. The dish is not for those who may be timid or unsure about what a bone marrow experience involves. I was presented with an entire ham bone stripped of most of its meat, with a straw emerging from the marrow, and a stir fry of vegetables around the base of the bone. I was instructed to drink or slurp the bone marrow and gnaw on the bone to enjoy any gristle and meat still attached to the ham, alongside the stir-fried vegetables. The dish was interesting, to say the least. I drank a bone marrow slurpie and survived.
