Traveling the world via the Internet, I came across the term “bespoke.” Its brief definition is “been spoken for” and is usually in reference to custom-tailored suits. I stumbled upon the term on an English Cut site about an off Savile Row tailor. Anyway, the term applies to our cooking. We work directly with guests to create menus which have been spoken for. While the tailor selects fabric, measures, cuts, and shapes to order, we hopefully are able to mirror this interaction. We work directly with fantastic individuals who provide us with ingredients that shape guests’ menus.
